Gembrook Hill Sauvignon Blanc is sourced from a low yielding vineyard in the Upper Yarra Valley, grown in the red volcanic loam soils of a hilly amphitheatre.
The vineyard was planted in the early 1980s by Ian and June Marks alongside other legendary Yarra Valley producers, Mount Mary's John Middleton and Wantirna Estate's Reg Egan.
Minimal intervention prevails at the winery. A portion of the juice ferments in stainless steel tanks, the remainder in seasoned French oak. After maturing on lees for nine months, the wine is bottled with little or no filtration.
Pale yellow, Gembrook Hill Sauvignon Blanc is a crisp wine with pure fruit flavours and restrained, intense minerality. Cellaring potential is six years.
